This really couldn’t be easier, and I’m told that quinoa is a very healthy grain.
Cooked to instruction, and basically add anything you’ve got in the fridge. I like to put in a mixture of grated carrots, cucumbers and cherry tomatoes.
If I’ve got any plain yoghurt lying about, I throw in a bit of mint or coriander, salt, pepper, and a big squeeze of lemon.
Finish with a good glug of olive oil and you’re ready to rock!
