This soup is so easy to make and the children loved the fact that they could spell words in their bowl and see the letters from their names.
Fry an onion in a little oil and then add a clove of garlic. When they’re caramelised, after about 5 minutes, add chopped carrots and celery if you like and give it a good stir before adding a litre of vegetable stock. Let it simmer for 15 minutes and cook a nice helping of the pasta in a separate pot.
When the soup is ready to serve, add a helping of pasta to each bowl and serve on its own of with a hunk of bread and butter. You can always add the dry pasta straight to the soup while cooking but I find the starch sometimes gets a little overpowering.
