• 100g nuts. Can be split 50g pecan & 50g of cashew or whatever you fancy – my favourite is an almond, pecan and hazelnut mix 
  • 5 dates soaked in hot water for 5mins
  • 5 tablespoons of raw cacao powder
  • 1 tablespoon of honey
  • 2 tablespoons of desiccated coconut

Firstly, crush up some almonds and mix them with desiccated coconut. Put in a bowl to the side for later to roll the balls in.

Place all ingredients in a vitamix and mix into a paste, and add a small amount of the date water to get the consistency right.

Roll the mixture into golf-sized balls and roll in the almond/coconut mix to coat the outside. Put in freezer for 1 hour and then refrigerate
