Another Saturday breakfast recipe for you to get stuck in to! Have a great weekend.
Makes 8 muffins
Ingredients
  • 1 ripe banana
  • 1 1/2 cup almond flour
  • 1/2 cup millet flour
  • 2 tsp baking powder
  • 1 cup dates
  • 1/2 cup natural unsweetened yogurt
  • 2 eggs
  • 1 tsp cinnamon
Preheat oven to 190 C.
Toss the flour mix, cinnamon and baking powder into a bowl.
Put your dates and yogurt in a food processor and blend until you get an even paste and add it with your eggs to the flour-mix.
With a fork mash your banana, add it to the other ingredients and mix it all well. Pour the dough into your muffin moulds.
For topping use half a teaspoon agave syrup on each muffin and sprinkle with a bit of cinnamon.
Bake for 20-25 minutes.
