Served in Bon Maman jam jars with a spoon on the side.


15g fresh mint leaves, washed
1 liter ice cubes
6 tbsp fresh lemon juice
5 tbsp caster/superfine sugar
5 tbsp St Germain Elderflower Liqueur (It’s pricy but will last forever and you can use it so many summer drinks and desserts. I found mine in a large supermarket.)

Put all of the ingredients into a blender and blend until the ice is crushed and ‘slushie’ like. I know you know what I mean by that. Spoon into two chilled jam jars, garnish with fresh elderflower if you have it, mint if you don’t. Serve with a spoon.

I’m waiting for more of the Elderflower to come out before I attempt the cordial but the mint in my garden is getting out of hand and I wanted to use some straight away. I hope you enjoy this as much as we did, it’s fresh, summery and will take you about five seconds to make. Which means you won’t be away from the sun for too long!
