This is a dreamy, creamy soup full of tomato flavour, perfect for this horrible cold winter afternoon! 

Ingredients For Four People

  • 1 onion
  • 2 tbsp olive oil
  • 395g tin chopped tomatoes
  • 1/2 tsp caster sugar
  • 200ml vegetable stock (from stock cube or stock powder)
  • 1 bay leaf
  • 2 tbsp mascarpone cheese
  • 1 handful fresh basil leaves
  • Salt and pepper
  • 2 tbsp fresh cream


  • Peel and chop the onion into small pieces. Take a big saucepan and book the onions in the olive oli until they are soft. Add the chopped tomatoes, the sugar and the liquid stock. Drop in the bay leaf and let everything cook gently for 15 minutes. Take the pan off the heat and add the mascarpone and basil leaves.
  • Pour into a blender and whizz the soup until it is smooth. Take the soup and season it with some salt and pepper. Pour the soup into bowls and serve with a little swirl of cream poured on top.
