Fish fingers have been a family favourite for years, and what better way to serve them up to the children than homemade? Tanja Ting’s recipe below looks absolutely delicious, and I can’t wait to try it at home.

Serves 4

Ingredients

  • 800g boneless white fish
  • 2 tbsp almond flour
  • 2 tbsp millet flour
  • 2 tbsp flaxseed flour
  • 2 tbsp olive oil
  • Sea salt and fresh ground pepper
  • 1 lemon cut in 4

Method

Preheat oven to 200 C.

First cut your fish into stripes. Then place them in a medium size bowl and add olive oil with salt and pepper. Turn them around and make sure all the pieces gets covered.

In another bowl mix the flours. Then take the fish and turn them one by one in the flour mix and place them in a oven tray covered with baking paper. Drizzle a bit of olive oil on top and bake them for 15 minutes.

Remember to squeeze some fresh lemon over your fish fingers.
