Relax in the knowledge that everyone can indulge in this delicious guilt-free treat this Easter!
Ingredients (makes approx. 12 biscuit bites):
- 1 packet Sweetpea Pantry Chocolate Giggles Biscuit Mix
- An egg white
- Unsalted butter or non-dairy alternative, such as coconut oil or butter.
- Honey
For the frosting and piped icing:
- 50g softened unsalted butter
- 120g full fat soft cream cheese
- ½ tsp vanilla extract
- Tsp of honey
- A piping bag
- Blended beetroot, purple grapes, spinach, carrots for a healthy and natural colouring
Instructions:
For the biscuits:
- Melt together the butter and honey
- In a separate bowl, whisk the egg white until frothy
- Combine the Sweetpea mix in another bowl with the butter and honey, adding in the egg white and stirring until completely combined
- Then, knead together into a firm ball and leave to cool
- Lightly dust the work bench, roll the mix out to a thickness of about 3-5mm and form egg shaped ovals with a cutter or mold these yourself
- Using a spatula, place onto a baking tray and pop it in a pre-heated oven at 180°C to bake for about 8-10 minutes
- Let them cool
For the frosting and piped icing:
- Meanwhile, cream the soft cream cheese and the butter in a bowl
- Add the honey
- Spread the mix on your Easter biscuit bites
- Store in the fridge to set the topping
**To make a different coloured icing: add a few drops of a natural food dye from a health store or alternatively, boil a couple of beetroots in a pot and add this bright red water to the mix! The same can be done with grapes for a purple dye, spinach for a green dye and carrots for an orange dye!
- Then, take your piping bag and fill with the remaining frosting mixes and snip a tiny hole in the bottom.
- Decorate!
