- 250ml double cream
- a handful of toasted nuts
- 1 bag of Daylesford Organic Chocolate & Vanilla Meringue Bunny Tails (100g meringue nests or homemade mini meringues will work too)
- 2 stems of rhubarb, poached with the juice and zest of an orange or 2 sliced bananas
- small bar of milk or dark chocolate
This seasonal take on Eton Mess is so simple you can make it with your little ones, and play with the flavours depending on what you have in the cupboards.
Whip the double cream until soft peaks form. Melt the chocolate in a glass basin over a pan of hot water. In a deep glass serving dish, start with a layer of meringue, spoon 1/3 of the whipped cream on top, and half the fruit. Build another layer of meringue, 1/3 whipped cream and fruit. Add a final layer or meringue and the last of your whipped cream. Finish by dripping over the melted chocolate, and sprinkling the nuts on top. Serves 4 – 6.
