I always forget how easy cous cous is to make, put some in a bowl, and cover with boiling water. I like to cover it by over a cm, adding a glug of olive oil, and a sprinkling of veg stock.

Cover with plate and set aside for 5 minutes. In the meantime, chop up any bits of veg you have in the fridge.

Put a fork through the cous cous to fluff in up, add a little bit of dressing and add in the vegetables, and finish with a grilled chicken breast.

So easy and so delicious!
