Ingredients

  • 3 tbl coconut oil
  • 85g coconut palm sugar
  • 140g honey
  • 2 eggs
  • 225g wholegrain spelt flour
  • 1 tsp baking flour
  • 3 t/l water

Method

  • Mix oil, coconut sugar, honey and water (may need more or less water depending on how runny the honey is) in a pan over low heat to melt all together.
  • Cool mixture and add eggs. 
  • Fold in flour carefully not to lose air in mixture. 
  • Lastly, add baking powder.
  • 45 min at 150/160
