These fruit and nut bars are part flapjack, part bar – part ‘packed full of goodies’ that I definitely would not get my children to eat otherwise! They are my answer to the perfect pick me up on a cold winters morning when the cookie jar is calling but you know that’s not what you need. They have no dairy, no refined sugar and no gluten so they also tick the intolerance box for those who are allergic or just trying to avoid the above. My ‘little man’ adores them straight after school particularly when lunch ‘was not my favourite mummy’ said with large doleful eyes, which basically means I have not eaten a morsel since breakfast!
Fruit and Nut Bars
100g almonds (blanched)
100g gluten free organic jumbo oats – or just normal jumbo oats
100g medjool dates (remove stones)
100g soft dried apricots
35g hemp seeds
50g organic coconut oil
1 tablespoon date syrup
2 tablespoons maple syrup
Pre heat the oven to 170
Line a square baking tray (about 23cm x 23cm) with parchment paper.
1.Put the walnuts, almonds and oats in a magimix and chop finely – remove and pop in a bowl.
2. Put the dates (stones removed) and apricots in the magimix and whizz till finely chopped.
3. Add back in the nuts, coconut oil (which is very hard – it will melt in the oven), hemp seeds, date syrup and maple syrup and whizz. The mix should come together in a soft dough .
4. Press into the tin and bake for between 12 and 15 minutes. It will have gone slightly golden and come away from the sides of the paper. Leave to cool and cut into squares or bars. These bars will keep for 4 days in an airtight container. Perfect little energy pick me ups!
