Kale is unbelievably good for you, it is the queen of vegetables.  It is just so perfect for your body and wellbeing at lunchtime.  It fills you up and keeps you going sometimes even until dinner.


  • 2 handfuls of kale (stalks removed)
  • 1 ½ medium-sized cucumbers, unpeeled
  • a handful of coriander
  • 1 celery stick
  • a tiny piece of jalapeno pepper
  • 1 lime, squeezed

Serves 1 (350ml)

Start by juicing the kale and the cucumber together.  Continue with the coriander and the celery, add the jalapeno.  Finish by squeezing the juice of a lime, whilst stirring your juice.

Drink immediately or pour into an airtight container and keep in the fridge for up to 12 hours.
