Lizzie King is one of our favourite guest bloggers and we’re so excited to see her brand new website live. I’m gutted to be away this half term because she’s going to be cooking up a storm at the Daylesford Organic Farm Shop in the Cotswolds, with a super healthy family breakfast talk, and later in the day, a healthy halloween hacks and snacks. She always gets booked up very quickly, so don’t forget to book your class through Daylesford.com to avoid disappointment.

Here’s a lovely little number for you that’s going to be in the breakfasts demo. I’m going to be talking about and making super fast or make ahead breakfasts that keep energy levels and concentration high as well as leisurely weekend brunch recipes that are beyond delicious and packed with goodness. We know it’s the most important meal of the day but none of the cereal companies are helping us so come and see how easy it is to whip up the healthiest, most lip-licking start to the day ever…

Overnight Chia Oat Berry Sundae

This is the perfect grab and go instant and portable breakfast that you throw into a pot the night before. Perfect Monday morning and stress day beating. With bags more fuel than a croissant and totally tasty.

Ingredients:

  • 1 Cup Oats
  • 1 tbsp Chia Seeds
  • 1 tsp linseeds
  • 1 Cup plus 2 tbsp Almond Milk
  • 1 tbsp almond butter
  • 1 tbsp maple syrup
  • 1/2 cup strawberries, raspberries or blueberries
  • Slivered almonds to serve

Method:

Pour dry ingredients into a large jar or pot and stir to combine. Whisk wet ingredients together in a mug and pour over, stirring thoroughly. Add a smashed strawberry, raspberry or blueberry, cover and let sit for 2 hours up to overnight in the fridge.

You can hear it through as well on a cold morning and sprinkle a dash of cinnamon for extra cosiness.  Packed with Aztec magic from the chia seeds that is brain boosting and energy rich, this will fill up small tummies and keep them on fire at school and going for ages.
