Colin McGurran’s mixed berry ice lollies are a refreshing fruity treat for the summer. They are perfect for cooling down children and providing a healthy snack as they use up energy in the sun.
Cooking time: 10 minutes plus overnight freezing time
- 300g of raspberries
- 150g of strawberries
- 2 tbsp of icing sugar
- 200ml of water
Put the berries and icing sugar into a blender and blend in short bursts. Then add the water and blend continuously until smooth.
Pour the mixture through a sieve into a jug to remove the pips and then pour into the lolly moulds. Put the lids or sticks on and leave to freeze overnight until firm.
When ready to eat, pour hot water over the lollies to loosen them so that they can be removed easily from the moulds.
