Delicious Roast Chicken
I love this recipe because it only takes 5 minutes to prepare. Something mothers are always short of, is time! You can then leave it in the oven while you bath and play the children, etc.
It is also very adaptable depending on your family’s favourite foods and the age of your children.
Choose the vegetables that everyone loves to throw in the mix.
You can serve this in bite size for young children, purÃ©e for babies or whole for adults. A tasty, healthy, balanced meal – simple, quick.
- 1 x organic whole chicken (approx 1.5kg)
- 1/2 butternut squash chopped
- 2 x courgettes chopped
- 2 x sweet potatoes chopped
- 5 x mushrooms chopped
- 1 x leek chopped
- 2 x lemons
- 1 x tablespoon pine nuts
- Drizzle olive or coconut oil
- Season with mixed herbs, salt & pepper to taste
On a baking tray place the chopped vegetables and whole chicken (upside down). Season with lemon, oil & seasoning.
Place in the oven at 180*C for 1 1/2 hours, cover with kitchen foil.
After 1 hour, turn the chicken the right way up, take off the foil and mix the vegetables around so that they are all moist and covered in the gravy.
Cook for a further 1/2 hour or until golden.
