1. Roasted Brussels – wash and trim. Cut an x at the bottom, put in roasting tray with olive oil, salt and pepper and roast for 40 min at 200. Delicious. You’ll never look at brussels the same way again.
2. Sweet potato mash – peal and chop, steam, then mash with a tad of coconut milk and grate a little nutmeg. Salt and pepper to taste.
3. Roasted carrots with onion and ginger – peal and cut carrots into batons, put in roasting tray with olive oil, salt and pepper and top with grated ginger and sliced red onion. Turn everything around with a spoon and roast again for 40 min at 180/200
4. No bread stuffing (a family secret) – fry 4 shallots till golden brown. To it, add 1 apple, 2 punnets of mushrooms, 1 box of prunes, 2 boxes of ready to eat chestnuts chopped. Fry altogether. Add salt and pepper to taste and 1 cup of red wine. Let the alcohol burn off and cook slowly for another 30. Best every stuffing EVER!
