Leonora’s Flourless Pancake
- 2 banans
- 2 eggs
- pancake toppings
- Pop the peeled bananas in a blender and crack the eggs on top. Blitz for five seconds.
- Put a pan on the hob with a small nob of butter or coconut oil
- When the pan is nice and hot, start pouring the batter in, in small rounds in a clockwise motion. Dependign on the size of your pan, I usually fit five or six around the edge and a few in the middle.
- After a couple of minutes flip them over for a further minute’s cooking. Serve plain for snacks or with any desired topping.
We like making little sandwiches out of the pancakes by sandwiching two together with jam or chocolate spreads.
A little tip! If it’s too liquify add another banana. Too thick? Add another egg. I recommend using one egg and one banana per child.
