If I’m ever at a loss at what to cook on a Sunday evening, I so often turn to my version of my childhood cheese toasties. These little gems literally take minutes to make, and go down very well with the whole family. Let us know what fillings work for you!

Ingredients:

  • Mini pitta pockets
  • Butter
  • Cheese and onion

Method: 

Toast the pitta pockets for one minute, take them out and make an opening at one end. Spoon in the filling and toast for a futher minute with the cut side up.

Serve with a seasonal salad or a nice tomato soup.
