Recipe For The Weekend: Apricot And Nut Tiffin

Indulge in a delightful culinary experience this weekend by treating yourself to the exquisite flavors of a mouth-watering apricot and nut tiffin. This delectable treat not only satisfies your sweet tooth but also requires no baking or hot ovens, making it a perfect and enjoyable activity to share with the kids.

Serves 12

What you need for your apricot and nut tiffin recipe

Ingredients

150g plain chocolate, broken into pieces
100g milk chocolate, broken into pieces
50g butter, diced
2 tbsp Agave syrup
150g digestive biscuits
175g soft apricots, halved
50g raisins
50g
Whole almonds
2 tbsp sunflower seeds (20g)
Pinch sea salt flakes

Method

Line a 20cm square tin with baking parchment.
Place both chocolates, butter and agave syrup in a large bowl over a pan of simmering water until melted.
Crush the biscuits with your fingers keeping some larger pieces and mix into the chocolate with the dried fruits and nuts, seeds and salt.
Press into the tin and chill until set.
Cut nut tiffin into 12 squares.

Nala's Dream by Taylan Kurtul

Nala’s Dream is a magical children’s story with an incredibly poignant story behind it. It was first imagined by five-year-old Taylan Kurtul, who dreamed up an adventure in which his real-life kitten, Nala, travels into space. Taylan sadly died in February 2024, just eight months after being diagnosed with a medulloblastoma brain tumour. His mum lovingly brought the story he created to life as a book in his memory, celebrating Taylan’s wonderful imagination while raising vital funds for Brain Tumour Research. A beautiful legacy filled with adventure, love and a little boy’s magic.
