A while ago I came across an experiment to make your own Coke Cola on Instagram. YC was really keen to have a go, so we waited until the summer holidays to make it. Turned out to be a really refreshing drink for the middle of a heat wave.

Start by grinding up the coriander with the pestle, you want to get a nice pulp.
Then add the zest of the lime and the juice to it and mix.
Strain the mixture through a sieve to get rid of all the bits.
Over a low heat, heat your honey. You want it to boil and go a golden brownish colour. You don’t want it to go darker as it will make the drink taste bitter.
Add the honey to the lime and coriander mix, then finally add the carbonated water.
I am not going to lie, it doesn’t taste anything like coke cola, but it is a tasty refreshing drink. Kind of like a slightly nutty honey and lemon drink you would have for a sore throat.
Both YC and BB loved making it and enjoyed the drink while we had a picnic under the table. EC was unfortunate to miss out on it through.
